Malabar Peach Crisp

If peaches are sold out,  use our apples.  Fuji if you like firmer texture ; Cortland if softer

1 cup self-rising flour
1 cup brown sugar

1 cup quick oatmeal  ( or 1/2 cup oatmeal and 1/2 cup granola)
1/2 cup softened butter
1/2 teaspoon baking powder and 1/2 teaspoon baking soda

Mix the above in a bowl.

Now prepare 5 cups of sliced Malabar Peaches.   Add about 1 cup of sugar and 1 teaspoon of cinnamon.  Place into a 9×9 pan.

Spread the bowl mixture over the fruit.   Pat down level.

Bake at 350 for 1 hour.    Make coffee while you wait.

If you did it right, top will be golden brown and crusty.

  1. Try adding some blueberries to the peaches if you like.
